Agar agar became popular several years ago but has been around for many years. It is commonly used in many vegan dessert recipes as it has a gelatinous texture. It is derived from red algae, normally Gelidium anasii, which like most seaweeds, has few calories, no sugar or fat, and a small quantity of fibre. Additive E406.
