Xylitol is a sugar alcohol, with a crystalline, granular structure, which can be used as a sweetener. It is a colourless or white solid that is soluble in water. It is derived from Xylose sugar, which is naturally occurring in many fruits and vegetables. The word xylitol comes from the Greek roots xylo- which means “wood” and “–itol” signifying sugar alcohols. It can be used as a natural alternative to sugar with its 1:1 sweetness ratio and 40% fewer calories. Tree-Harvest's Xylitol is derived from Birch bark, although it may be derived from other plants, such as maize.
